I love anything lemon, lemon cookies, lemon roasted potatoes and especially ice cold lemonade on a hot day – it’s so refreshing! I also love the colour yellow, and when my mini me was little yellow was her favorite colour, as I always told her it was a “happy colour”.
My Favorite Lemon Recipes
This blog post is going to be a little different from past food posts. Instead of one recipe I’m going to share with you six links to some of my all time favorite recipes using lemon. I hope you enjoy them as much as my family does.
Main course & side dish
Lemon Poppy Seed Chicken with sweet pea and mint couscous. Many moons ago when we were first married my husband lost his job so I was lucky enough to have a house husband for a while. At the time I was working a very stressful sales job with long hours so loved that I could come home to a delicious meal at the end of the day. He was a little obsessed with Rachel Ray at the time so many of the meals he cooked were from her show. This Lemon Poppy Seed Chicken is a regular in our house and once you have tasted it I’m sure it will find its way into your meal rotation too!
Greek-Style Lemon Roasted Potatoes Weather served with souvlaki, lamb or seafood you will love this simple potato dish. So easy and fast to make plus it uses items you typically have in your pantry so no running around for special ingredients. It’s also a perfect side to bring to a pot luck or family gathering.
Fresh Strawberry, Lemon Curd and Yogurt Shooters. These delicate looking desserts definitely taste as incredible as they look. Sweet strawberries, sour lemon and creamy yogurt is a virtual party of flavours! I like to use plain Greek yogurt as I love the slight bitterness, however regular plain yogurt is great too.
Fresh baked goodies
Bakery Style Lemon-Blueberry Muffins I love fresh baked goods but sometimes find them a little too sweet. These muffins have the right combination of sweet and tart and the streusel topping makes them irresistible. Believe me a dozen muffins will disappear before you know it!
Soft and Chewy Lemon Cookies Pillows of happy! These cookies may take a little extra time due to having to leave them to sit a minimum of three hours before baking but believe me they are so worth the wait.
Homemade Limoncello, now I have to admit that I haven’t actually tried this recipe YET!! However I was watching City Line this morning where they made this delicious looking drink and knew I had to add it to my post. I’ll definitely be giving this one a try over the hot summer months!
